With a normal action camera I plan the framing before the ride. With 360 footage I can postpone a lot of those decisions until editing.

For short rides I still prefer a normal action camera because there is less post work. For one-time events, 360 is reassuring because I am less likely to miss the direction of the action.

This is a useful distinction for the site: capture flexibility versus post-production time. We should judge 360 workflows by total time from recording to final video, not only by what can be changed afterward.
