My camera has decent video but no usable telemetry. I can record a GPX track on my phone during the same ride.
Is that enough for a basic speed/route overlay if I synchronize it carefully?

Yes for many projects. The main requirements are a usable track and a reliable way to align its time with the video.

I would create a visible sync event near the start and avoid stopping/restarting only one of the recordings without noting it.
